    Here’s pretty little Easter egg from a previous Here’s pretty little Easter egg from a previous frozen mini loaf. The oven spring wasn’t great because of being frozen but it was a fun one to try!     I love tacos 🌮!! So I’ve been wanting to find I love tacos 🌮!! So I’ve been wanting to find a good corn /sourdough recipe that stays together better but also healthier and easier to digest. These are a keeper!! The trick to using a cast-iron tortilla press is to always use parchment paper surrounding your tortilla! Here’s the recipe.  Sourdough Corn
Tortillas
 one cup (130g) of Masa Harina 
1/2 cup(130g) sourdough starter or discard 
3/4 cup(110g) bread flour 
1/2 teaspoon of salt 
2 tablespoons of lard, shortening or coconut oil 
3/4 cup(185g)warm water not above 85 degrees 
Mix all ingredients together 
Then separate into 12 balls that are approximately 50 g each  Roll out into tortillas or use a tortilla press dusting with extra masa as needed. 
Cook in a skillet on high heat for 20 to 30 seconds on each side 
The dough can also be frozen and then thawed and rolled out into tortillas later. 
If you want to make a double batch they freeze beautifully!! 
Here’s the recipe for a double batch(24 tortillas) 
The second time I made them I used :
220 g freshly milled organic soft, white wheat berries ( They were delicious, just as good as the bread flour ones!! )
2 tablespoons of coconut oil, 
2 tablespoons of lard 
11/4 teaspoon of salt 
370 g of warm water
260 g organic Masa Harina 
260 g Starter or Discard.  You can also make this without sourdough starter : Here’s the recipe:
1c masa 
1c all-purpose flour 
1c warm water
1/2t salt

I also finally tried adding some black garlic to a loaf and wow it’s incredible ty @breadstalker_ for the inspiration !!     Here’s what my starter looked like this morning Here’s what my starter looked like this morning after I fed it the 1:6:6 ratio mentioned in my last post.  It rested for 11 hours at 74 degrees 
Here’s the ratio I used again 195 g starter :1170 water and 1170 bread flour with 10% rye mixed in. To scale up your starter for multiple bakes first figure out how much starter you will need? 
These ratios are for a 1:6:6 feeding (one part starter, six parts water , and six parts flour.)
You could do this with a 1:5:5 ratio or even high like a 1:8:8. 
Divide that by six and then divide that by two then subtract 6% and you will have your number.
For example :
If I need 3000 g of starter 
I’ll take 3000 divided x 6 = 500 
500 divided x 2 = 250 
250 - 6% = 235
235 g starter x 6 = 1410 g flour + 1410 g water = 2820 new starter + your original 235 g starter = 3055 g 
3055 g - 3000 g ( end goal) = 55 g to save for your next bake !!     Cinnamon Raisin Brioche for my 91 year old grandmo Cinnamon Raisin Brioche for my 91 year old grandmother.  Sourdough is such a lovely gift and can be shipped across the country. Just last week I shipped two loaves to Arizona to my husband’s 90+year-old grandmother. I am so happy to be able to give these amazing ladies a little something to look forward to in their day!!🥰🙏🏻🥖Here are some tips for shipping bread. Make sure the bread is completely cooled wrap it in a plastic bread bag, and then into another craft paper bag. Put bubble wrap around the loaf tightly so it doesn’t shift to much during shipping. Try to ship as early in the week as possible so that it gets there before the weekend. Have your recipients refrigerate the bread as soon as it gets there so there is no risk of it molding. It will keeps weeks in the fridge and months in the freezer! 🥖🥳☺️

The dough still held up fairly well considering) and will be very well fermented and easily digestible because of the extra king fermentation. 80 % hydration 
2% salt, 2% butter
and 20% levain
100% strong bread flour Baked in a lightweight graniteware pan Mixed in my @kitchenaidusa stand mixer

    These gluten-free cassava flour tortillas are so easy to make especially with a Victoria tortilla press from Amazon !! 
They are soft and delicious!! 
Makes 12 (6-8) in tortillas 
Easy Cassava Flour Tortillas
330 g cassava flour
6T or 90 ml cold pork lard 
1 t sea salt 
Pulse everything above in a food processor til finely crumbled then add 300 ml cold water slowly.  Divide into 12 balls and roll out ( or use a tortilla press) using parchment paper on either side. 
Take the parchment off the top leave the parchment on the bottom and place tortilla side down in a hot cast iron pan. After a few seconds remove the parchment paper.. it will come off easily. Flip the tortilla over and you are done with the first one then continue on with 11 more. 
Store in a Ziploc in the refrigerator for up to a week and reheat in a cast-iron skillet
